Jinmaek 53 is the distillery’s full-strength expression of its signature wheat soju. Rich, concentrated, and intensely aromatic, it showcases the distinctive character of organic wheat at 53% ABV while remaining remarkably smooth. Jinmaek is dedicated to restoring a historic Korean wheat soju tradition dating back to the 1540s. Wheat was once used to produce soju in Korea, but the practice largely disappeared over time. Founder Sung-ho Park was inspired by a recipe documented in Soowoonjapbang (수운잡방) , one of Korea’s earliest culinary texts. After years of research and interpretation of historical records, he revived the tradition while thoughtfully adapting the process for a modern distillery. The name Jinmaek (眞麥) is a historical term for wheat, reflecting the grain at the heart of the distillery.

Jinmaek 53 is made from 100% organic, estate-grown wheat using a slow, three-stage fermentation at low temperatures to develop the grain’s full aromatic character and depth of flavor.
