The grapes are hand harvested and gently pressed. Alcoholic fermentation begins naturally with indigenous yeasts. Before fermentation is complete, the wine is placed in a closed pressurized tank (Charmat). The natural CO₂ produced at the end of the fermentation remains trapped in the wine, creating fine, elegant bubbles without the addition of sugar or yeast.
